Cooking everything from restaurant favorite encrusted tilapia to chilled summer soups to barbeque favorites and even appeared once with his 4 ½ year old daughter, Madison.

"Feature: David’s Bistro"

Hungry Z from NBC 5 Street team visited David’s Bistro on Leap Day for David’s Bistro special Leap Day Event. He wrote:

"From the outside, "David’s Bistro" doesn’t look like much. Located in a strip mall, it is easy to drive by and not even know it’s there. My friends, that is a mistake you don’t want to make….."

The leap day menu included:
"Buttery Kobe beef burgers.... a mini filet of beef topped with tomato and spinach. The pan seared beef was butter knife tender and easily the star of the evening. Pomme frites sliced shoe string thin were accompanied by both a horse radish and honey mustard sauce served creatively in a wanton."

"Service at "David’s Bistro" is also first rate. Unfortunately at many establishments, your server knows little if anything about the food they serve. Not so here, Chef David goes out of his way to ensure his staff knows the menu as well as he does. Our waiter knew everything from ingredients to preparation."

"Dream Meals"

The food critics of the Daily Herald were charged with the task of creating their Dream Meal. They were to pick their favorite ambience, appetizer, entrée, dessert, and drink from restaurants they visited in late 2006 and 2007 to create their dream meals.
Deborah Pankey reviewed David’s Bistro in November 2007 (see following) and also chose a dessert and a specialty drink from David’s Bistro in her dream meal.

"Apple and Brie Cinnamon Crepes"
"Sweet, Spicy, Creamy, Crunchy. The apple and brie cinnamon crepes offered a sensation for every part of my palate. "

"Chocolate Martini"
"Chef/Owner David Maish says a couple stops in every Friday evening for chocolate martinis. If I lived closer, I’d be at the bar with them. The bistro’s Cointreau- and coffee liqueur-infused libation can be enjoyed before or after. I vote for after- I’m always looking for an excuse to have two desserts.

"Class Act"

"I sipped a Cointreau-spiked chocolate martini at David’s Bistro with a friend, recounting the meal we had finished just moments before. The word we kept coming back to: Flawless. It’s not often that every dish hits high notes, but Chef David Maish pulls it off at his Des Plaines restaurant."

"One bite of the pork shank appetizer and its no surprise it’s been on the menu for 10 years. The apricot-glazed meat falls off the bone, waiting to be scooped up with a bright mango salsa."

" His pear salad with Italian blue cheese is another long-time favorite. Maish changes up the pears depending on seasonal availability, allowing the fruit’s natural sweetness to play against the bite of the bleu cheese and the crunch of the walnuts under a cloak of Dijon dressing."

"The pork tenderloin will continue it reign as a menu staple. Maish browns diced apples with brown sugar before adding dates and heavy cream to the pan and finishes it with a handful of Gorgonzola. A sprig of rosemary garnishes the plate adding another level of sensory pleasure.
